Ingredients

For 6 servings

  • 250 g lean cottage cheese (1 package)
  • 3 eggs
  • 50 g oats, grated, or oat flour (5 tablespoons)
  • 120 g turkey ham
  • 50 g trappista cheese, grated
  • 30 g green onion (2 stalks)
  • 60 g red bell pepper (1/2 piece)
  • 1 teaspoon baking powder, 1/2 teaspoon salt, pepper, 1/2 teaspoon paprika

Instructions

  1. Preheat the oven to 180°C and place 12 paper cups in a muffin tin, or use a silicone mold.
  2. Mix the cottage cheese with the eggs using a fork, or blend smooth with an immersion blender. Stir in the grated oats, baking powder, salt, pepper, and paprika, and let sit for 5 minutes so the oats can absorb the liquid.
  3. Meanwhile, cut the ham and bell pepper into small cubes, and slice the green onion into rings. Set aside a handful of cheese for the tops, and fold the rest together with the ham and vegetables into the batter.
  4. Divide the batter among the molds, sprinkle with the reserved cheese, and bake for 20–22 minutes until the tops are golden brown and a toothpick inserted in the center comes out dry.
  5. Let cool in the mold for 5 minutes: warm it will still be soft, as it cools it will firm up. Keeps in the refrigerator for 4 days, 2 muffins per serving.
