Ingredients
For 2 servings
- 300 g frozen edamame (green soybeans), shelled
- 5 g toasted sesame oil (1 teaspoon)
- 2 cloves garlic
- 10 g soy sauce (2 teaspoons)
- 20 g lime (1 piece), zest and juice
- Chili flakes or hot paprika, flaky salt
Instructions
- Pour the edamame into boiling salted water and cook for 3–4 minutes until heated through and softened, but still tender. Drain and shake dry so it can brown in the pan.
- Heat the sesame oil in a pan over medium heat and toast the thinly sliced garlic for half a minute until fragrant but not yet brown.
- Add the edamame, soy sauce and a good pinch of chili flakes, and toss over high heat for 2 minutes until the sauce coats the beans and they brown in places.
- Remove from heat, grate the lime zest over it, squeeze the juice over it, and sprinkle with flaky salt. Good warm and cold, keeps in a container in the fridge for 3 days.
