Ingredients
For 4 servings
- 400 g strawberries
- 5 g lemon zest (1 teaspoon)
- 15 g honey (1 tablespoon)
- 600 g plain skyr
- 40 g whipped cream
- 30 g meringues (about 6 small pieces)
- Vanilla extract, a few fresh mint leaves
Instructions
- Blend one third of the strawberries into a puree with the lemon zest and half of the honey. Cut the rest into quarters and mix with the remaining honey. Within 10 minutes it will release its juice and become syrupy.
- In a narrow bowl, whip the whipped cream with a hand mixer until stiff peaks form, and gently fold it into the skyr along with the vanilla. This small amount of whipped cream will make the skyr light and fluffy.
- Break up the meringues roughly, so there are larger pieces and crumbs as well.
- Just before serving, assemble in 4 glasses: skyr cream, strawberries, a drizzle of strawberry puree, meringues, then repeat once more. Don't mix it completely: Eton mess is an English summer dessert where strawberries, whipped cream and crushed meringues are loosely combined, and it's good because it's marbled and a bit messy.
- Garnish with mint and serve immediately, because the meringues will soften in the cream within about fifteen minutes.
