Ingredients

For 4 servings

  • 60 g ladyfinger biscuits (10 pieces)
  • 10 g rum (1 tablespoon), or rum flavoring
  • 10 g honey for syrup (½ tablespoon)
  • 20 g raisins
  • 15 g walnuts, coarsely chopped
  • 300 g plain skyr
  • 200 g lean cottage cheese
  • 15 g honey for cream (1 tablespoon)
  • 15 g erythritol (1 tablespoon)
  • 10 g unsweetened cocoa powder (1 heaping tablespoon)
  • 60 g milk, 1.5% fat (for chocolate sauce)
  • 15 g dark chocolate
  • 10 g honey for chocolate sauce
  • 30 g whipped cream (for topping)
  • Vanilla flavoring or scraped seeds from 1 vanilla bean, zest of 1 orange

Instructions

  1. Syrup: mix the honey for syrup, rum, and half of the orange zest in 1 dl warm water, and soak the raisins in it for 10 minutes.
  2. Vanilla cream: blend the cottage cheese with skyr, honey, erythritol, and vanilla with an immersion blender until completely smooth. The smoother it is, the more it will resemble cooked vanilla cream.
  3. Break the ladyfinger biscuits into 3–4 pieces. Place half of them on the bottom of 4 glasses, drizzle with half of the syrup, just enough so it is absorbed, and sprinkle with half of the walnuts and raisins from the syrup.
  4. Spoon half of the vanilla cream on top, then add another layer of biscuits, syrup, walnuts, raisins, and cream. Refrigerate for at least 2 hours; the flavors will blend even better overnight.
  5. Chocolate sauce before serving: warm the milk and stir in the cocoa, honey, and chopped chocolate pieces until the chocolate melts and the sauce becomes glossy. Let it cool for a few minutes until lukewarm but still pourable. If prepared in advance, keep it in the refrigerator and warm it to lukewarm before serving.
  6. In a narrow mug, whip the cream with a hand mixer until stiff peaks form. Pour the chocolate sauce over the glasses, add a small spoonful of whipped cream on top of each, and grate the remaining orange zest over it.
