Ingredients

For 4 servings

  • 300 g lean curd
  • 250 g natural skyr
  • 150 g chestnut paste (frozen, thawed)
  • 10 g rum (1 tablespoon), or rum aroma
  • 10 g honey (1 teaspoon)
  • 120 g pitted sour cherries, fresh or frozen
  • 10 g dark chocolate for topping
  • Vanilla aroma

Instructions

  1. If the cherries are frozen, thaw them in a strainer, drain the liquid, and mix with half of the rum.
  2. Blend two-thirds of the chestnut paste smooth with the curd, half of the skyr, the remaining rum and the honey using an immersion blender. Taste it: chestnut paste is sweet on its own, you might not need honey.
  3. Mix the remaining skyr with a little vanilla. This will go on top, instead of whipped cream.
  4. Layer into 4 glasses: cherries at the bottom, chestnut curd cream on top, vanilla skyr on the very top.
  5. Press the remaining chestnut paste through a potato ricer directly onto the glasses, the way you would chestnut purée, and grate a little dark chocolate on top. Refrigerate for at least half an hour.
