Ingredients
For 1 serving
- 40 g oatmeal (4–5 tablespoons)
- 150 g milk, 1.5%
- 120 g egg whites (from 4 eggs, or boxed)
- 60 g blueberries, fresh or frozen
- 50 g raspberries, fresh or frozen
- 50 g plain skyr on top (1 heaping tablespoon)
- 8 g honey (1 teaspoon)
- 1 dl water, pinch of salt, cinnamon
Instructions
- In a small pot, mix the oatmeal with the milk, water, and a pinch of salt, and cook over medium heat, stirring, for 3–4 minutes until it thickens.
- In a mug, whisk the egg whites with a fork until they're no longer stringy. You don't need to whip them into a foam.
- Turn the heat to low, and pour the whites into the porridge in a thin stream, stirring constantly with a whisk. If you dump it all in at once, it will cook in streaks, like egg drop soup.
- Keep stirring for 2–3 minutes over low heat. It's ready when the porridge has lightened, become fluffy, visibly increased in volume, and you can't see any transparent, raw egg white in it.
- Stir in the honey and spoon into a bowl. Top with the skyr and berries, and sprinkle with a pinch of cinnamon. Microwave the frozen fruit for 30 seconds before adding it so it doesn't cool down the porridge.
