Ingredients
For 1 serving
- 40 g oats (4–5 tablespoons)
- 10 g unsweetened cocoa powder (1 heaping tablespoon)
- 80 g milk, 1.5%
- 150 g plain skyr
- 40 g low-fat cottage cheese
- 12 g honey (2 small teaspoons)
- 8 g dark chocolate, at least 70% (1 square)
- Pinch of salt, a few drops of vanilla extract
Instructions
- In a bowl, whisk the cocoa with the milk and a pinch of salt until smooth. The salt enhances the cocoa flavor.
- Stir in the oats, two-thirds of the skyr, most of the honey, and the vanilla.
- In another bowl, mash the cottage cheese with a fork together with the remaining skyr and honey until you have a smooth cream.
- Spoon the cocoa oats into a glass or jar, spread the cottage cheese cream on top, and cover.
- Refrigerate for at least 4 hours, but overnight is best. This time allows it to become thick and dense, like the inside of a brownie.
- In the morning, chop the chocolate finely and sprinkle it on top. It's best served cold.
