Ingredients
For 4 servings
- 500 g lean ground beef
- 160 g small tortilla (8 pcs, approx. 15 cm)
- 50 g trappista cheese (4 slices, halved)
- 80 g iceberg lettuce, cut into strips
- 60 g onion (½), finely chopped
- 60 g cornichon, sliced
- 80 g greek yogurt, 0% (for the sauce)
- 15 g light mayonnaise (1 tablespoon)
- 10 g mustard (1 teaspoon)
- 15 g ketchup (1 tablespoon)
- 30 g cornichon for the sauce, finely chopped
- Salt, pepper, a pinch of smoked paprika
Instructions
- Burger sauce: mix together the yogurt, mayonnaise, mustard, ketchup, finely chopped cornichon and a pinch of smoked paprika. If you have time, refrigerate for 10 minutes to let the flavors come together.
- Divide the meat into 8 equal balls (approx. 60 g each), and season with salt and pepper.
- Place a meatball in the middle of a tortilla, and using a piece of parchment paper, press it flat with the bottom of a mug, almost to the edge of the tortilla. The thinner it is, the crispier the edges will be.
- Place the tortilla meat-side down in a hot, oil-free pan, and cook for 3 minutes until the meat edges brown and crisp, and the top is no longer red.
- Flip it over, place half a slice of cheese on top of the meat, and cook for another 1 minute until the bottom of the tortilla browns and the cheese melts.
- Fill with lettuce, onion and cornichon, drizzle with sauce, and fold together like a taco. 2 pieces make one serving.
