Ingredients

For 2 servings

  • 320 g salmon fillet, skin removed (2 slices)
  • 25 g soy sauce (2 tablespoons)
  • 15 g honey (1 tablespoon)
  • 2 cloves garlic
  • 10 g fresh ginger (2 cm)
  • 15 g lime juice (half)
  • 400 g broccoli (1 head)
  • 4 g sesame seeds (1 teaspoon)
  • 30 g green onion (2 stalks)
  • Salt, pinch of chili flakes

Instructions

  1. Preheat the oven to 200 °C (400 °F) and line a baking sheet with parchment paper.
  2. Glaze: mix together the soy sauce, honey, crushed garlic, grated ginger, lime juice and a pinch of chili flakes.
  3. Cut the broccoli into florets, peel the stem and slice it into rounds, it's delicious too. Spread on the baking sheet, salt lightly, pour 3 tablespoons of water over it, and bake for 8 minutes. At the beginning the water steam softens it, so the edges don't dry out.
  4. Push the broccoli to the edge of the sheet, place the salmon in the middle, and brush with half of the glaze. Bake for 10–12 minutes, brushing with the remaining glaze halfway through.
  5. It's done when the salmon flakes easily with a fork, but the center is still juicy. For the last 2 minutes, switch the oven to grill so the glaze caramelizes, but watch it as honey burns quickly.
  6. Serve with the broccoli, sprinkle with sesame seeds and sliced green onion, and drizzle with the juices left on the sheet.
